Sugo di salsiccia - Sausage Tomato Sauce

This tomato sauce is a typical Sardinian recipe, used on "malloredus" pasta. It's probably the best tomato sauce ever, and you have definitely to try it, even though you don't have Sardinian sausages, which have some spice in it, as anice.

Ingredients
Tomato sauce 
Sausages
Onion
Olive oil
Sugar
Basil leaves 
  • Finely chop the onion (as much as you like, but not too much) and place it in a pan with a little bit of olive oil.
  • When it becomes golden, add the chopped sausages and stir fry.
  • Add the tomato sauce and let cook for about 20 minutes.
  • Then add a little bit of sugar, which is essential to contrast the acidity of the tomatoes.
  • Add the basil leaves to flavour.
  • You don't need to add salt because the sausages are salted enough.
